My easy pasta bake

A super easy and delicious homemade pasta recipe




There's nothing like a homemade dish, the ingredients may be healthier and you know exactly what is going in, it is even said that eating home cooked meals for 5 days may even give you a longer life-win win!


Pasta is a great option as it is fat free and a good source of fiber. If I want to get some more veggies in me then I will add random veggies that I have in the fridge like peppers or carrots (my friend thinks i'm nuts for adding carrots in) but if you cut them finely you wont even notice! it's a flexible recipe so you can add whatever you like to it.


Ingredients for sauce

100g onions

2 cloves garlic

400g tinned tomatoes

1 tablespoon tomatoe puree paste

1 tin of water

1/2 tablespoon balsamic vinegar

Pinch of basil and oregano

Salt and pepper

1-2 handfuls of spinach


Ingredients for pasta

250g gluten free pasta

You can either use Mozzarella and Parmesan or Cheddar


Instructions


  1. Cook pasta, get a pan and drizzle olive oil into pan.

  2. Add the onion, garlic and any other veggies you may want and fry for a couple of minutes.

  3. Add in tin of tomatoes, tomato paste, balsamic vinegar, basil and oregano, water and spinach bring to a boil and then cover and simmer for 10-15 minutes.

  4. Season with salt and pepper.

  5. Preheat oven to 180c or gas mark 4

  6. Add the cooked pasta until mixed.

  7. Add to an ovenproof dish and top with the cheese. Sometimes I like to use a Parmesan grater so the cheese is really thin. As I put a layer of pasta In dish I top with cheese add another layer of pasta then repeat until all pasta is in the dish.

  8. Bake until cheese is melted.
